Peach Basil Jam

Mom was cranking out batches of peach jam last week, and I picked some basil from her garden for a tomato salad. The fragrant herb perfumed her kitchen and she turned from the stove and said, "What about peach basil jam?" When cooked, basil lends an anise flavor that brightens the jam. I suggest warming it up, and pouring it over vanilla ice cream. You could even crack some black pepper over it, if you're feeling chefy.
